The fried chicken canon
The moves that appear in every single win, with his numbers.
- Thighs, not breast. Every winning sandwich used boneless thighs — juicier under the crust ▶ Chick-fil-A.
- Cure first: salt + MSG (+ pinch of sugar), 1h to overnight. Dry cure or in the buttermilk — MSG shows up in the cure, the dredge, and even the pickle brine of his wins ▶ Spicy Deluxe.
- Buttermilk carries the spice: paprika, garlic powder, white pepper; pickle juice optional ▶ Popeyes.
- The craggy-flake dredge — his signature: drizzle a few tablespoons of the wet marinade INTO the seasoned flour and toss, creating flaky beads that fry into shattering crust. Used in every chicken win on the channel ▶ KFC sandwich.
- The 11-spice build is captured (KFC landslide win): flour + paprika 3.5T, white pepper 3T, MSG 1.25T, salt 2.5T, blended mustard seed/peppercorn/celery seed, garlic, ginger, oregano, thyme.
- Fry at 350°F — sandwiches 3-7 min, nuggets 3-5, bone-in 6-8 at a 330°F band, always to 165°F internal. Double-fry wings and Korean styles: 325°F to cook, 375°F 2-3 min to shatter ▶ Korean vs American. Deep frying beat every other method in the 32-ways test (28 pts vs pan 26, air fryer 3) ▶ 32 ways.
- Ground formats: grind the skin in. Nuggets and patties = chicken + its own skin (his McNugget and dino-nugget wins); shape, freeze 30-45 min, then bread ▶ McNuggets.
- The service model (from his restaurant-hacks tour): par-fry 300-320°F, chill up to 4 days, flash-fry 350-375°F for 1-3 min at the pass ▶ restaurant hacks. Pressure-frying is the Jollibee moisture secret ▶ Jollibee shift.
The menu build
Five items assemble the whole lane, all verdict-backed.
The Sandwich beat every chain
Cured thigh, craggy 11-spice dredge, 350°F 5-7 min. Potato-tangzhong bun (his Shake Shack/Big Mac bun science). MSG bread-and-butter pickles. Cane-style sauce. Reference wins: KFC "by a landslide", Chick-fil-A ×2 "no contest", BK, Wendy's, McChicken "number one easily".
The Bucket unanimous rout
Bone-in at 330°F band 6-8 min; laminated cold-butter biscuits at 425-450°F; garlic-confit mashed potatoes + roux gravy; slaw with crème fraîche. His KFC bucket won every component except mac and cheese ▶.
Nashville Hot Tenders KFC's rated "awful"
The finishing move: whisk cayenne 4T + paprika + garlic + salt + MSG + brown sugar 2T into 1.5 cups of the hot frying oil itself, dunk while both are hot ▶.
Korean Double-Fry Wings bracket champion
Korea won his 12-country fried chicken world cup ▶. Cornstarch + baking-soda dredge, 325°F then 375°F, gochujang glaze with 8 raw garlic cloves off-heat. Buffalo tie-breaker option: hot sauce emulsified with cold butter + slurry (perfect 30/30 in the 32-ways American bracket).
Katsu & Karaage gluten-free crust
Karaage uses a pure cornstarch coating, 350°F, 2-3 min in small batches, marinated up to 2 days ▶ Z0EVmZ. Katsu: pound to an even ½", 325-350°F, 3-5 min/side. Both give a second crust texture for the menu without a second fryer protocol.
The Nuggets whole-meat truth
Grind thigh/breast + skin, freeze, katsu or 3-stage coat (cornstarch slurry → seasoned flour → cold tempura batter), 375°F. His chain ranking proved whole-meat beats ground across the board — Popeyes won, McDonald's near the bottom ▶.
Chicken & Waffles
Yeasted waffle batter (1h rise), honey butter, Nashville option. Breakfast crossover with the McGriddle maple-candy trick (syrup reduced to 265°F, injected as candy balls) ▶.
The sauce bank
- Cane sauce (beat Cane's): ¾c mayo : 5T ketchup : 1.5T Worcestershire + garlic, rest overnight ▶
- Buffalo: hot sauce heated, cold butter + cornstarch slurry emulsified in — cling and gloss
- Lemon pepper, double win: dehydrate REAL lemon peels (24h at 105°F), blend with salt/citric acid/mushroom powder/black pepper; wet version = beurre-blanc lemon butter, never boiled ▶
- All three BWW sauces beat the originals: Asian Zing, mango-habanero (butter-emulsified), parm-garlic (yolk + streamed oil) ▶
- Honey butter (Whataburger biscuit win): salted butter whisked into hot honey off-heat, sage steeped ▶
- Toum (from the shawarma build — fully halal): garlic + salt, lemon juice alternated with 3 cups streamed oil ▶
Chain intel (his ranking tours)
| Ranking | Winner | The lesson |
|---|---|---|
| Fried chicken sandwiches (25+ chains) | Jollibee ~8.4 | Minimal toppings, genuinely seasoned chicken; freshly-fried beats pre-fried everywhere |
| Nuggets (11 chains) | Popeyes | Whole meat > ground; salt level = biggest score swing; old oil = biggest killer |
| Tenders (17+ chains) | Long John Silver's 8.5 | The upset: hot-out-of-the-fryer freshness beat every brand name |
| Fried chicken in America | Bizzy B's, Atlanta | Breast juiciness is "the true test" — no fat to hide behind |
| Country bracket | Korea (yangnyeom) | Double-fry + glaze retains crunch under sauce |
| Spicy fast food | Jollibee Spicy Chicken Joy ~9 | Balanced heat wins; Popeyes ghost wings lost points purely on undersalting |
The two flaws he cites over and over across every chain: under-salting and old fryer oil. A restaurant that just salts correctly and changes oil is already ahead.
The sides empire (came free with the corpus)
🍟 Fries
Brined fries won his fry tournament (25/30): 3.5-4% salt brine 3-5 days, then 320°F → 350°F double fry ▶. His tallow McDonald's fries beat real McDonald's blind ▶. Waffle fries: crinkle-mandolin 90° rotations, blanch 30s with baking soda + vinegar, freeze, fry frozen 350°F — beat Chick-fil-A's ▶.
🥔 Potato science
Duck-fat tater tots won the 43-ways potato test (27/30): confit shreds in duck fat, cornstarch, freeze, fry ▶. Duck-fat confit hash browns won "in a landslide" vs McDonald's ▶.
🍞 Buns & biscuits
Tangzhong milk buns (Big Mac win, Shake Shack tie), potato buns with milk powder, steam-baked sub rolls, laminated buttermilk biscuits ("best we've ever made"), 48-72h cold-ferment focaccia, lye-bath pretzels that beat Auntie Anne's.
🧀 The mornay reflex
His universal cheese move: real roux mornay for nacho cheese, animal fries, queso, mac. Never melted slices, never pre-shredded.
The pork-free niche map
Beyond chicken — the perfected, halal-friendly veins in his catalog, each a future menu module.
🌏 Asian lane (his deepest vein)
Orange chicken "a million miles better" than Panda (2:1 cornstarch:flour dredge, aromatics off-heat) · Mongolian beef ("best version period") · chow mein/chili-garlic noodles (350°F oil-pour = his favorite sauce ever) · fried rice canon (day-old rice, always) · katsu curry with homemade roux cubes · Hainanese chicken rice · adobo ("greatest chicken dish of all time") · tikka masala 10/10 · biryani with full masala + dum method · hand-ground Thai green curry · pad thai that made Uncle Roger concede · pho (4-hour roasted-bone method) · Korean BBQ galbi/bulgogi (pear marinade — matches the Guga-corpus winner).
🥙 Middle Eastern lane (natively halal)
The full shawarma build: vertical-spit chicken with cardamom/cinnamon spice stack, homemade flatbread, toum, jajik, rice with toasted orzo, halva from scratch (syrup to exactly 250°F). This is the most restaurant-ready halal vein in his entire catalog ▶. Banh mi won his 12-country sandwich world cup — a halal chicken banh mi rides the same bread science.
🌮 Mexican lane (beef-first)
Beef birria quesatacos + birria torta ("greatest sandwich we've ever made") · barbacoa from brisket + cheek (300°F, 4-6h, cartouche) · oven al pastor technique (swap pork→chicken thighs, keep the achiote-pineapple marinade) · homemade tortillas (oil-based, his stated preference over lard) · the Crunchwrap and Quesarito wins (tortilla fat → beef tallow).
🍔 Burger lane (feeds the smash slot)
The perfect-burger test settled it: 75% lean, 2.5oz smash patties ×2, American cheese, simple sauce ▶. Smoked patty won methods; fry-bread burger won the whole 30-ways bracket. Double-grind chuck + short rib (Whopper landslide). America's smashburger won his country bracket — "simplicity beats piling on."
🍰 Dessert lane
Basque cheesecake (400°F ~1h — and note: the one dish Guga remembered from a Basque chef was the cheesecake; the two corpora agree) · Levain-style 6oz cookies at 425°F · Crumbl rebuild wins · key lime pie · tres leches · churros with dulce de leche cremo (beat Disneyland) · Krispy Kreme glazed win (corn-syrup crackle glaze) · mochi waffles ("best waffle I've ever had").
🍳 Breakfast lane
100-egg canon (63°C/45min sous vide poach; double-boiler soft scramble) · English muffins (griddle + oven) · the McMuffin egg-ring steam trick · IHOP pancakes 3-for-3 win · McGriddle maple-candy injection · beef-bacon swap makes his whole breakfast-sandwich program halal.
The house pantry (make-it-yourself layer)
The deepest surprise of the corpus: he documents how to produce nearly every pantry input from scratch. For a restaurant, this is the moat — nothing on the shelf a competitor can buy.
🧄 Black garlic at home cross-lane unlock
Hold whole bulbs at 140°F for 4-8 weeks, wrapped in plastic then double foil (a rice cooker on keep-warm does it in ~3 weeks) ▶ w7An6n. Three separate wins converge on this one ingredient: Guga's black-garlic paste beat a plain dry-age, Weissman's Popeyes-beating sandwich mayo is built on 8 pureed cloves of it ▶ T5SYu8, and here he shows how to make it for the price of garlic. If the restaurant has one signature ingredient, this is the candidate.
🌶️ Fermented hot sauce → buffalo
3.5 tbsp fine sea salt per 1.25 qt water, ferment Fresnos 5 days to 2 weeks, blend with vinegar + toasted garlic oil ▶ uL8UJP. This feeds straight into the buffalo sauce that scored a perfect 30/30 in his fried chicken bracket. House hot sauce, house wings.
🥬 The ferment rules
Universal method: zero the jar, weigh vegetable + water together, multiply by 0.02 (2%) — or 0.03 for mold-prone items ▶ u80eGi. Sauerkraut at 2%, 2 weeks. Kimchi 4-7 days. Yuzu kosho at 10% salt. Whole-grain mustard 3 days. Lacto ketchup 2-3 days → burger sauce at 2:1 mayo.
🧀 30-minute mozzarella
Gallon of whole (never ultra-pasteurized) milk, citric acid, rennet; stir exactly 25 seconds, curd to 105°F, stretch 4-6 folds under a minute ▶ mAxy_o. House mozzarella for the birria quesataco and the cheese-crust torta.
🍜 Stock & dashi discipline
Chicken stock: roast bones 425°F for 40-45 min, then simmer only 2-4 hours — not the marathon everyone claims ▶ rjDHii. Dashi: hold 170°F, never boil the kombu, bonito steep 15 min. Tonkotsu shortcut: pressure-cook 1.5h twice instead of a 14-hour boil.
🍪 The cookie formula
Melted (not creamed) butter for chew + an extra yolk for fudge + a chopped chocolate bar instead of chips for molten marbling; pan-bang at the 6-minute mark ▶ wyuec0. Pairs with his Levain clone (6oz balls, 425°F) for a dessert lane.
Also documented from scratch
Sourdough starter and two bread programs · croissants by hand · babka · sticky buns and burger buns (both tangzhong) · laminated buttermilk biscuits · focaccia · 5-ingredient flour tortillas · English muffins on a griddle · fresh pasta and tortellini · yogurt (180°F → 115°F → incubate 6-12h) · kombucha · water-kefir soda · marshmallows (syrup to exactly 240°F) · cured egg yolks · homemade flour milling.
One myth checked along the way: in his poached-egg test the traditional whirlpool won — sous vide at 63°F/45 min came out underdone, and Alton Brown's still-water method overcooked the yolk.
Halal ledger — this lane
| His winner | Flag | Halal build |
|---|---|---|
| Pork fat back ground into chicken patties (BK, McChicken) | 🐷 | Chicken skin ground in — his own McNugget/dino-nugget technique, same fat logic |
| Bacon-fat tortillas, guanciale sauces, carbonara butter | 🐷 | Beef tallow / beef bacon — the Guga lane already smokes tallow in-house |
| Beer batter (Filet-O-Fish win) | 🍷 | His own tempura logic: ice-cold carbonated water + ice cube, 350°F |
| Mirin / sake / Shaoxing in Asian sauces | 🍷 | Rice vinegar + honey/sugar + splash of stock; his teriyaki already reduces to the same place |
| Pork katsu / gyro / al pastor | 🐷 | Chicken katsu (his own curry swap), chicken shawarma, chicken pastor — marinades unchanged |
| MSG throughout | ✅ | Halal as-is; the house umami powder from the Guga lane covers the MSG-averse |
Reading a corpus that argues with itself
Both creators contradict their own earlier work, and the rule we use is the same in both lanes: the later, better-controlled test wins. Weissman's early steak video calls room-temping the meat "non-negotiable"; his later myth-test measured it and debunked it, matching Guga's finding exactly. Guga reversed himself on butter-aging and black garlic the same way. Any technique on these pages traces to the most recent controlled verdict, not the most confident sentence.
Cross-creator note for the Lab
Weissman's 34-ways steak test crowned tandoor (27) over butter-basted pan sear (26.3), with ribeye as best cut and au poivre as best sauce — while the Guga corpus crowns charcoal + picanha. Logged as open kitchen-validation questions, not contradictions: different judges, different formats. Also: his MSG mega-test was judged WITH Guga — buffalo wings, chimichurri picanha, and Neapolitan pizza all hit perfect scores. The lanes agree more than they argue.
