How to use this book. Every recipe is assembled only from techniques that won a taste test on camera. The House Steak is the flagship; everything else is a module you can bolt onto it. All recipes are halal as written — substitutions already made and noted.
The House Steak 🥩flagship
Why: every element individually beat its alternatives — picanha over ribeye, 250°F reverse sear, milk-powder crust, the 1-tsp butter finish.
Ingredients
- 1 whole picanha, ~3 lb, fat cap on
- Coarse salt (generous)
- Black pepper, fresh cracked
- Garlic powder
- Whole-milk powder, ~2 tbsp (our amount)
- 2 tbsp butter + 1 clove garlic + thyme sprig
- Optional: pinch of MSG or umami powder (below)
- Lump charcoal
Method
- Butcher: trim silver skin, stop at the third vein. Cut 1–1.5" steaks with the grain.
- 24h ahead: salt every side and edge. Uncovered on a rack in the fridge. (Add the MSG/umami pinch with the salt.)
- Cook day: straight from the fridge, pepper + garlic powder. Two-zone lump-charcoal fire.
- Indirect at ~250°F to internal 115–118°F (wireless probe, never a fork).
- Dust both faces with milk powder, then sear over the coals 60–90s/side, flipping every 30s. It browns fast; keep it moving.
- Pull at ~128–130°F; carryover lands 135°F medium-rare.
- Rest ≤10 min. Brown the butter with garlic and thyme; spoon 1 tsp per steak on top.
- Smoked flaky salt, mixed-peppercorn grind, slice against the grain.
Doneness ladder if someone insists: cook their steak to 135°F anyway, then dip 10 seconds in hot brown butter for a "well-done" exterior — fooled Guga's tasters (▶ pnHG8g).
The Zero-Attention Steak (Sous Vide)
Why: edge-to-edge doneness beat a $65 steakhouse head-to-head ▶ ORmfcH; 2 hours beat 6, 12, and 24 ▶ d3wB68.

Method
- Dry brine 24h as in the House Steak. Bag with dry aromatics only: garlic powder, dried thyme, dehydrated onion. Never butter or oil in the bag.
- Cook per table. Pat completely dry after.
- Sear ≤1 min/side: charcoal chimney, Searzall, or ripping cast iron. Never a bare small torch, never the oven broiler.
- Finish like the House Steak (1 tsp brown butter, smoked salt).
Service mode: cook ahead → ice bath → fridge up to 6 days → reheat 135°F/30 min → sear at the pass. Tested indistinguishable-or-better vs fresh ▶ Up5ObT. This is how a restaurant runs it.
Stuffed Picanha — the Family Secret
Why: the one dish Guga calls a family secret, rated like-butter 10/10 ▶ J7TcBZ. Halal build uses his own beef-bacon method ▶ abPa10.
Ingredients
- 1 whole picanha, fat cap scored
- Low-moisture mozzarella, sliced
- Beef bacon, crisped + chopped
- Beef-bacon salt: crisped beef bacon blitzed 1:2 with coarse salt (our ratio)
- Butcher's twine
Method
- Butterfly a deep pocket — do not cut through.
- Stuff with mozzarella + crisped beef bacon. Tie or skewer shut.
- Season outside with the beef-bacon salt.
- Reverse sear: 250°F indirect with a probe to ~120°F, then hard sear all faces.
- Rest 10 min so the cheese sets gooey, slice across.
Guga's note: the cheese won't fully melt at medium-rare and that's correct — chasing melt overcooks the meat. Stuff it with anything; the pocket is the technique.
Butter of the Gods 🧈best steak of 2020
Why: his highest-rated finisher ever ▶ PVPaHd. Halal as written.
Ingredients (our proportions)
- 1 stick butter, soft
- 2 tbsp roasted bone marrow (brine marrow overnight in 1% salt water first)
- 1 tsp anchovy paste
- 1 cured egg yolk, grated (below)
- 1 small shallot, minced
- 1 tsp garlic paste
- Chopped parsley
Method
- Roast the brined marrow bones ~450°F/15 min; scoop.
- Fold everything into the soft butter. Roll into a log in plastic; chill ≥1h.
- Coin onto any hot rested steak.
Bench of proven alternates: gochujang-parmesan, kimchi, hondashi, miso, anchovy-sriracha. Rule: strong flavors ride in butter, never raw on the meat.
The Umami Powder (MSG-Beater)
Why: beat real MSG in Guga's own blind test ▶ sE3dYC — "the sixth taste."
Ingredients (equal parts, dried)
- Tomato
- Anchovy
- Onion
- Mushroom
- Garlic
- Parmesan
- + one piece kombu
Method
- Dehydrate everything ~20h until snap-dry.
- Grind with the kombu to a fine powder. Jar it.
- Use anywhere MSG would go: in the dry brine, dusted over the finished steak, or 50/50 with salt as the house finishing salt (that mix won the seasoned-salt battle ▶ jzAEp6).
Smoked Tallow — Grill Flavor in a Jar
Why: "the champ" for adding charcoal soul to an indoor steak ▶ k8aAvr; smoke the fat, not the steak ▶ VtJwyi.
Ingredients
- Beef fat trimmings (save every picanha cap trim)
- Smoker + mild wood
Method
- Smoke the fat low at ~165°F for 8 hours, collecting the rendered tallow.
- Strain, jar, refrigerate.
- Melt a spoonful over any pan-cooked steak at the sear, or use as the searing fat. Bonus: baste a fresh steak with rendered dry-aged tallow and it reads as dry-aged ▶ 7MTaKK.
House Chimichurri
Why: champion of the five-classic-sauces test; avocado oil specifically beat olive ▶ rbT7h_.
Ingredients
- Big bunch parsley, fine-chopped
- ½ red onion, minced
- ½ red bell pepper, minced
- 3 garlic cloves, minced
- 2 tbsp red wine vinegar
- ½ cup avocado oil (not olive)
- Salt, chili flakes
Method
- Stir everything; rest 30 min.
- Serve on the side. Never cook a steak in sauce — that lost every test it entered.
Halal Galbi — the World-Tour Champion
Why: crowned best steak dish on Earth in the 12-country tour ▶ Pci1-Q, and the only marinade that beat salt-pepper-garlic on premium beef ▶ woY1Ez. Mirin dropped; pear + honey carry it.
Ingredients
- 2 lb short rib, butterflied thin + scored
- 1 Asian pear, blended
- ½ onion + 4 garlic cloves + thumb of ginger, blended
- ½ cup soy sauce
- 2 tbsp honey + 1 tbsp brown sugar
- 1 tbsp sesame oil
- Lettuce, rice, kimchi, ssamjang to serve
Method
- Blend the marinade; vacuum-seal with the beef 24h.
- Grill hot over charcoal, fast — the sugars want to char, not burn.
- Serve as lettuce wraps with rice and ssamjang.
$1-Steak Chicken-Fried Steak
Why: "nothing comes close" among all $1-eye-round preparations ▶ b-ArYf, using the tournament-winning pineapple tenderize ▶ vhKtSE.
Ingredients
- 4 eye-round steaks, 1", malleted flat
- ½ fresh pineapple, blended with skin
- Buttermilk
- Dredge: 4 tbsp flour + 1 tbsp cornstarch + salt, pepper, garlic powder, chili flakes
- Oil or beef tallow for frying (tallow won the flavor tests)
Method
- Coat in pineapple slurry 45 min max. Rinse three times, pat dry. (Past an hour it turns to mush.)
- One light Jaccard/fork pass per direction, then mallet flat.
- Buttermilk dip → seasoned dredge → rest 10 min → dredge again.
- Fry at 375°F until deep golden. Gravy from the drippings if you want the full diner build.
Worcestershire-Cured Egg Yolks
Why: the winning cure in the yolk-topper test ▶ wsMLzZ — grated umami snow for any steak.
Ingredients
- 6 egg yolks
- Cure: ~1 cup salt + 1 cup sugar (3:1 salt-forward also tested fine)
- Worcestershire sauce to wet the cure
Method
- Bed of cure, nest the yolks, cover with cure moistened with Worcestershire. 5–7 days in the fridge.
- Rinse, dry in a low oven ~1–2h until firm.
- Grate over finished steaks like parmesan.
The Dry-Age Programbiggest single upgrade
Why: 45-day dry-aged beat a wagyu tomahawk outright ▶ 2x8kp1; the flavor move nothing else touched.

- 28–35 days (60 max)
- Never lean cuts, never Choice
- Trim the pellicle; render it into dry-aged tallow
- Sear dry-aged steaks only 1 min/side
Levels
- Classic: UMAi bag, fridge, 35 days. Salt and pepper only at the end.
- Signature coats (each beat plain dry-age on camera): anchovy paste · sumac paste · fresh wasabi · parmesan wrap · maple syrup · lime-zest butter.
- The 48h shortcut: press dry koji rice onto the steak, rack it 2–3 days, brush off, cook. Beat a real dry-age in a blind test with an NFL judge ▶ rb3SHg.
